Our Story
My name is Elaine Redmond and I set up Bakers Lane in 2011. It is a home run business specialising in novelty, birthday, occasion and wedding cakes, and sweet treats like cake pops and cupcakes.
From working in a bakery when I was 17, to studying for my Culinary Arts Degree, I have always had a great love for cooking. Baking was something I was especially passionate about, and was part of my life growing up. If I wasn’t helping my Grandmother make Butterfly Fairy Cakes, I was helping my dad make Apple Cakes, or creating a mess in the kitchen making Rice Crispie Buns with my siblings.
During school Home Economics was my favourite subject, and the first recipe I learned how to make was Pineapple Turnover Cake. I would spend my pocket money on recipe books and cake magazines, and I spent my weekend trying out new recipes. All my hard work paid off and at just 16 I took part in The Young Chef of the Future Award. This then led to my first part-time job in the bakery section of a busy city centre supermarket.
After school I studied for a Culinary Arts Degree, my course covered a range of subjects from French to business studies, to wine tastings. During my four year degree I got the opportunity to intern in a Michelin star restaurant, where I gained great experience working in a busy kitchen environment. The following year I interned in a well established bakery in Scotland. After three months decorating cakes I knew this was what I wanted to do as a career, and I decided then that I wanted to run my own bakery.
I returned to Ireland and achieved my Higher Honours Degree in Culinary Arts. The same bakery in Scotland contacted me and asked if I would like to return for another year, and I jumped at the opportunity. I was on the plane the day after I finished my last exam in college! I cannot thank the bakery enough with the training I received, and the amazing experiences I had while working there. While it was sad to leave, I returned to Dublin to focus on getting my own business up and running.
Baking and cake decorating is now my full time job but still my passion and favourite hobby. I enjoy baking with my sister and we have learned a great deal together trying out new recipes over man years. To this day she is still my favourite person to bake with. I have now passed on my love of baking to my nephew, who has been baking since the time he could hold a spoon. Now at 6 years old he’s able to make cupcakes by himself, and just needs a little help with the measuring. As soon as his two week old sister can hold a spoon she is going to be joining in on our baking fun.
